FINALLY... nearly perfect wheat bread!
Today, I accomplished a goal I have been working at for almost 6 months. Living in Dominica with limited resources has forced me to become more "domesticated" and perfect many of my baking skills. I have been using one of my mom's recipes for honey wheat bread but have found little success. The bread usually tastes fine but sometimes the bread will not rise, will remain doughy in the middle, and most frequently the loaf will collapse in the middle. My wheat bread usually looked like a heart with a square bottom. Last night, I did some research on the internet. I read some great pointers from other bakers such as adding gluten flour to help with rising and using special bread wheat flour. But of course here in Dominica, gluten flour is nonexistent and if I can find any type of wheat flour, it is a good day! After further investigation, I realized how important kneading is in helping the bread to rise. (I know duh!) I usually just kneaded the bread for a few minutes until it looked blended. Today I decided to knead the bread to death. After about 10 minutes, my arms were killing me! The second tip I decided to experiment with is to avoid over rising the bread. According to the recipe I have, I am suppose to let the dough rise first for over 2 hours. But I think living in an extremely hot and humid climate causes the dough to rise more quickly. Usually the dough is just overflowing in the bowl so today I decided to just let the dough double... about an hour rise.
ANYWAY, to make an already long story shorter here is my beautiful, delicious bread!!! 
It may not look like much to some of you but to me, it is a huge success. Perfecting this skill has been a dream of mine since I started making bread and after A LOT of mediocre loaves... I have finally found my niche!

It's getting hot in here!
I wanted to show you what a typical night entails. Here we are setting on the couch, acting crazy, but most notice how we are sweating like a bunch of pigs. We are trying to be tough and save some money by not using our air conditioner. But it is getting ridiculous. Also, I am sure our neighbors don't appreciate us walking around half naked... or maybe they do! Either way, it is 8:38pm on Thursday and our apartment is probably around 89 degrees and about 89% humidity. It is hard to ever take naps in the afternoon because we wake up in a deep sweat. It helps to take an ice cold shower before bed but who wants to do that?! Luckily, it still cools down at night. The stuggle is convincing the cool outside air to make friends with the hot sticky air in our apartment.

Back to our old routine
I apologize for not updating my blog. My mom was doing a fantastic job recording our events during their visit. Josh and I had fun assuming the role of host. This was the first time my parents had visited us as a married independent couple. All the sudden we were in charge! What a great and eye-opening experience.
Josh started classes today. He is officially a second year medical student. We have been frustrated with the school because of their lack of communication and organization. One example: The dean of students sent an email last night, the night before classes began, informing students of their intent to change when lectures will be posted on mediasite. Mediasite allows students to watch lectures through the Internet directly after the lecture was presented. Many advantages of mediasite include double speeding slower professors, pausing the lecture for note taking, re-watch lectures, watch miss lectures, etc. For extenuating circumstances, the school will grant students access to mediasite from the states. Now, mediasite won't be updated as frequently. The email gave no explanation for the change. We assume they are trying to encourage more students to attend the actual lecture. Ironically though, if every student attended the lecture, around 50-100 students would have to stand due to a lack of seating. We are merely frustrated with the lack of communication. We deal with these types of inconveniences daily so they amount to a migraine!
On a lighter note, we have made friends with the man who is painting our apartment complex. His name is Hendrix, like Jimi. We give him drinks and talk to him while he works. Yesterday, he promised Josh a coconut in the morning. Sure enough, we received a knock at the door around 6:45am. Of course Josh and I were still asleep! Hendrix had a huge coconut in hand. He carved a hole in the top so we could drink the milk. I was very surprised how much coconut milk tastes like fresh water. Hendrix says it is great for your digestive system and even helps "clean you out!" Later, we both agreed with him!!!! After we drank the milk, Hendrix walked home with the coconut where he used his machete to chop the coconut in half. Fresh coconut tastes very different than the packaged, sugarcoated coconut I have eaten.
Does anyone know what I can do with fresh coconut? According to Hendrix, I only have two days to use the coconut once opened. So hurry with any suggestions!!
